Countering the threat of Listeria

Many food processors face the most delicate of balancing acts when ensuring their product reaches market in prime condition. On one side of the balance there's an urgent need to ensure product is bacteria free, and will remain so for its required shelf life and beyond.
On the other side, there's an equally compelling need to make sure whatever biocide is used does not impact on product taste or appearance. Bacteria free is of little value if the finished product has been damaged by the biocide used.
